Question: I want to host a web site and wondering about some none blob options like drupal. And have them hosted on a mac mini for example.

If you’re running your own system you can put anything on it you want. To make it easy I recommend the LAMP distributions from Apache Friends. XAMPP for Windows and Linux: http://www.apachefriends.org/en/xampp.html and OS X http://www.apachefriends.org/en/xampp-macosx.html.
